Lyn is a very good friend of mine who also happens to be a total domestic diva. She's a master-entertainer, her beautifully decorated house oozes with Irish country charm and she can whip up comfort food like it's nobody's business! On a recent trip to her house, she made this super tasty (and very simple) recipe and I just had to share it with all of you... PS: This soup is total perfection for a cold winter's day!
Ingredients
5oz Red Lentils
2 large carrots
1 large onion
4 cups of chicken stock
1/2 tsp. Mixed dried herbs
Salt & Pepper
1oz butter
3 tbsp. Cream
Method
Melt butter and cook onion and carrot for 5 minutes. Add lentils and stir for 1 minute. Add stock, salt and pepper and herbs. Bring to boil, cover and simmer for 40 minutes. Stir occasionally. Leave for 5 minutes and then puree. Before serving, add cream. Serve with crusty bread and enjoy!
